About This Coffee

This organic lot is sourced from 145 members of the Ecoterra co-operative in Narino. These farmers are spread amongst the communities of La Union, San Pedro de Cartago and San Lorenzo and cultivate the varieties of Caturra, Colombia and Castillo at altitudes up to 2,200masl. Coffee production is the leading sector of the economy, and thanks to organic production, the producers in the association have been able to increase their income and improve their living conditions. They produce 250 MT per year. The association is also dedicated to improving the quality of life for our members through projects focused on women, young people and coffee-growing adults, as well as improving coffee quality.

The Region

The Narino department in South-West Colombia is renowned for its coffee quality, but also for having a high concentration of smallholder farmers with a low average farm area of 1.13 ha. This means that coffee generally receives a high level of care and attention to maximise quality and yield. 35 of the 62 municipalities in the Narino department are coffee producing. 

Because of its location, Narino has rich environmental diversity and a broad range of different ecosystems in which coffee can be cultivated. With altitudes of up to 2,300masl, coffees can mature slowly, producing a profile with distinct citric acidity and sweet chocolate and caramel notes. 

The Process

This coffee uses a traditional washed process. Ripe coffee cherries are selected and then pulped to remove the fruit. The coffee is then fermented for 24 hours in cement tanks to break down the sugary mucilage and improve the cup. After fermentation the coffee is washed thoroughly to remove the mucilage and then dried in parchment for 15-20 days in a marquensinha (a specialised drying marquee). Once the coffee has reached the optimal moisture content it is rested, before being transported to the dry mill for hulling, sorting and grading. It is finally bagged in GrainPro for export.
